The Perfect Mint Julep for Derby Day

The Kentucky Derby is booming this weekend with great spirit, high hopes and beautifully stylish hats.  But we mustn't forget another highlight of the event...The Mint Julep.  Mint Juleps (made with fine Bourbon, mint, sugar and ice) are synonymous with the Kentucky Derby, the historic thoroughbred race and annual kick-off to the Triple Crown series.
 
So in celebration of the event, join the winners circle and try making a batch for your favorite sports fans.  Enjoy!  
 
Ingredients
4 c. Bourbon (preferably Woodford Reserve)
3 bu. Fresh Mint
1 c. Water
1 c. Granulated Sugar
Crushed Ice
 
Method
First, remove about 50 small mint leaves.  Wash and place in a small bowl.  Cover with 3 ounces of the Bourbon.  Allow the leaves to soak for about 20 minutes.  Gather the leaves in a paper towel.  Thoroughly wring the mint over the bowl of Whiskey.  Dip the bundle again and repeat the process several times.  Simple Syrup: Mix 1 cup sugar and 1 cup water in a small saucepan.  Heat to dissolve the sugar.  Stir constantly so the sugar does not burn.  Set aside.   Mint Julep Mixture: Pour 3 1/2 cups of the Bourbon into a large  glass pitcher.  Add 1 cup of the simple syrup to the Bourbon.  Now begin adding the mint extract one tablespoon at a time to the Julep mixture.  Taste and adjust as you go.  When you think it tastes right, pour the whole mixture back into the glass pitcher and refrigerate for a few hours or overnight.  To serve:  Fill each glass with crushed ice, pour the Mint Julep cocktail over the ice and garnish with a sprig of mint.  Serve immediately.

Healthy Green Eats For Earth Day

Mother Earth Day Salad
Mother Earth gives us a bounty of beautifully nutritious fruits and vegetables to create plates of amazingly good tasting dishes. 

So in honor of "Earth Day" 2015 I created a salad made with raw and natural ingredients straight from Mother Earth's finest ingredients of organic kale, carrots, brown mushrooms, beets and sunflower seeds.

This salad is so darn delicious, simple and quick using only 5 ingredients.  Celebrate life and Mother Earth!

Mother Earth Day Salad
1 bu. Flat Kale, Chopped
4 ea. Organic Brown Mushrooms. Sliced
2 Organic Red Beets, Cooked, Peeled and Sliced
1/4 c. Shredded Carrots
2 Tbs. Raw Sunflower Seeds

Walnut-Honey-Citrus Vinaigrette
4 Tbs. Orange Juice
1 tsp. Orange Zest
2 Tbs. Honey
1/2 tsp. Dijon Mustard
1/2 c. Walnut Oil
Salt/Pepper to Taste

Method:
In a small mixing bowl add the Dijon mustard, honey, orange juice and orange zest.  Whisk in the walnut oil to emulsify.  Salt and pepper to taste.  Set aside.

In a large mixing bowl add the kale, mushrooms, beets and carrots.  Add the vinaigrette and toss lightly.  Transfer to a serving bowl or platter and top with the raw sunflower seeds.  Enjoy!

The Power of Juicing

Inspired by my former boss and friend Michael Jackson (while getting ready for the "This Is It") tour, I created many invigorating, natural juices, but the organic carrot-orange was one of his "anytime" favorite "super-health-comforting" blends.  And now 3 years later his lovely daughter Paris Jackson still remembers and is following his lead, keeping with the healthy spirit of the power of juicing and healthy eating.


Organic Carrot-Orange Juice

Organic Carrot-Orange Juice
10 organic carrots, ends cut off
4 juicing oranges, skin cut off, seeded and quartered

Method:
In a large mixing bowl gather the ingredients and take to the power juicer.  Have a small mixing bowl ready to gather the juice and a strainer.  Turn on the juicer and place the fruit and vegetable through until all are juiced.  Place the carrot-orange juice through a strainer (small batches at a time) with a small mixing bowl underneath to catch the juice.  Strain and pour into a carafe.  Refrigerate and enjoy.  You can add ice to a glass and pour the juice over if desired.

If you're looking to get a balance of protein, fat, and carbs for each snack, halve the portions and combine nuts, cheese, or lean meats with the fruit-forward treats! Summer Days Are For Soirees!

Summer days are for soirees in so many ways!  As a caterer and private chef to the stars for more than a decade now, I've learned that keeping party making simple, sexy and distinctly creative is the key that kept my clients coming back for more.  So get your creative juices flowing and become more than just the hostess with the mostest when planning your next gathering with friends.  From table design, to mixing the perfect summer libation and centerpiece creation, keep it simple, colorful and most of all have fun while doing it.  Below are a few of my casual outdoor catering tips for having a summer soiree that's sure to be memorable everytime.   

Summer Soiree Cocktails

Cocktails - A luscious blend of natural organic juices such as cranberry, pomegranite and fresh fruit purees are wonderful when making martini's, margaritas and mojitos.  Mix with vodka, tequila or rum, an infused simple syrup, agave, ice, lime and mint garnish.  Float a seltzer water or sparkling citrus soda atop of the cocktail for a fizz sensation.  Small cocktail glasses are great for leisure sipping and allows your guests to lounge, converse and enjoy in the soiree you've created.  Remember to always make your beverages colorful and festive.  Color and style catch the eye and presentation is everything.  Your guests will "toast" to you and your party.

Table Cutlery - The beauty and scent of fresh cut flowers is always a sight to see on any table arrangement, but the everlasting floral bloom of flowers is short lived when they begin to fade. So I like to purchase beautiful and colorful floral napkin rings that way I can interchange all year long.  They bring out the true spirit of summer and look radiantly beautiful when adding to any outdoor table arrangement.

Centerpieces - When decorating an outdoor dining table incorporate floral centerpieces with fresh fruit used as vases or opt for fresh herbs such as watercress and place them in watered glass vases for a more relaxed and casual feel to your overall dining soiree experience.  After your soiree place the centerpieces in small wooden boxes tied with raffi and give them to your guests as take-home gifts.  They will appreciate a piece of the party as a parting "keep sake."

Skewers - I am a favorite of all foods that I can "Nibble" on. Small portions and small bites that are packed with full flavor has always been my philosophy when creating my extraordinary soiree menus for celebrity clients across the globe. So when creating your summer festive soiree menu incorporate cold items that are light, cool and refreshing and a few hot items right off the grill to have a filling, yet satisfying mix of tastes and textures in one simple "Nibble."

Celebrity Chef Kai Chase's Summer Beauty Ritual: Spa Water

Going to the spa is a luxury that everyone should indulge in from time to time. But just because you're not in a spa due to the fluctuating economy or you just can't seem to find the time doesn't mean that you cannot enjoy the benefits of a spa at home.

H20 is an important and vital part to good health, pretty skin and staying hydrated during the summer, so one of my favorite summer beauty rituals is drinking Spa Water... (that refreshing beverage often served at fine spas infused with everything from rosemary and mint sprigs to cucumber and orange slices).  Spa Water is not only delicious, natural and healthy to drink, it's also a great way I like to hydrate myself while relaxing by the pool or just anytime I want to feel pretty from the inside out.

Here is my favorite way to prepare this refreshing beverage:

Citrus-Infused Spa Water

Citrus-Infused Spa Water
Ice Cubes
1 lemon, thin sliced
1 lime, thin sliced
1 orange, thin sliced 
1/2  hothouse cucumber, skin-on, thin sliced

Method:
Fill a glass pitcher halfway with ice cubes.  Toss the sliced fruit and cucumber into the pitcher.  Fill with mineral water and let rest at least 1 hour in the refrigerator.  Serve and enjoy!

Memorial Day Recipe: Chimichurri Sauce (Argentina)

Time to breakout the grill and the bbq barrels...it's summertime!  So, when putting your favorite marinated skirt steak, bone-in rib eye, grass-fed burgers and chops on the fire, skip the bbq sauce and the A-1 steak sauce and opt for the bright and vibrant flavor of  a Chimichurri Sauce. 

This zesty sauce of parsley, cilantro, sherry vinegar, red chiles, garlic and olive oil (used typically to garnish grilled meats in Argentina) is clearly a blending of Spanish and Italian cultures and cuisines. It serves a bold richness to grilled meats and punches a pack of herbal flavors when brushed on seafood and vegetables.

The amazing, aromatic flavors will have you using the sauce not just for grilled meats, but also as a marinade for fish, vegetables and tofu!  I also use it to top omlettes, as a spread for grilled seafood panini's and as an herbal dip appetizer for rustic breads.
 
Here is a wonderful Chimichurri recipe that I have prepared.  I like to make mine a little on the spicy side, so feel free to experiment and let your taste buds be your guide.  Enjoy!


Chimichurri Sauce/Marinade

Chimichurri Sauce
1 c. Flat Leaf Parsley
1 c.  Cilantro Leaves
2 Garlic Pods
2 Tbs. Shallots
3/4 c.   EVO (Extra Virgin Olive Oil)
2 Tbs. Sherry Vinegar
½ tsp. Red Pepper Flakes
½ tsp. Sugar (optional)
Sea Salt and Cracked Black Pepper (to taste)

Method:
In a food processor add the parsley, cilantro, garlic, shallots, sugar and sherry vinegar. Pulse just enough to get the ingredients coarsely chopped. Stream in the olive oil and pulse until medium chunked and well blended. You can also use a powerful blender. Pour the mixture into a bowl, add the red pepper flakes, salt and pepper. Taste and adjust seasonings to your liking. You may also prepare this sauce by hand using a knife and cutting board or morter and pestel. Great served on Grilled Portobello Mushroom Sliders (as seen below).

Celebrity Chef Kai Chase's-Fun, Fab-Summer Fitness Tips!

Summer fun can keep you motivated and on track with exercise, so if the Great Outdoors (beach! mountains! parks! backyards!) is looking way better than that basement treadmill or the stinky weight room at the gym, ditch the same old routine.

Obey your instincts and head outside for some fun physical activity that doesn't remotely feel like exercise but has the same benefits. Fun stuff can boost fitness and burn as many or even more calories than your usual workout routine.  As a celebrity chef these are a few I live and swear by:


Hula-Hooping. Spinning a Hula-Hoop burns 210 calories in 30 minutes and boosts your heart rate as much as a brisk walk. Hula-hooping has given me those sexy curves and keeps my belly flat, so when I'm rockin' my hip-hugger "Built By Wendy" jeans, I look incredibly sexy!  Get a Hula-Hoop for yourself, your loved one, yours kids and "hoop it up" together!

Toss a Frisbee. This classic summer toy can help you burn 109 to 252 calories in half an hour. This is a game I use to play at the beach, in the park and in the backyard of my home.  Leaping, jumping, stretching and running to catch a frisbee will definitely shape your arms and tone your legs.  

Dance the summer away. Join the fun when they play Dance Dance Revolution? Hit the dance floor at your bestfriend's  wedding. Accept your neighbor's invite to Zumba or Jazzercise class. Dancing regularly burns lots of calories (shakin' a sexy samba burns 10 per minute) while boosting fitness health.

Walk in water. Love to hang out at the pool but hate getting your hair wet? Skip the laps and get in some water walking. Water supports your weight but adds up to 12 times more resistance than air, so you'll get a great workout.  A little warm-water exercise feels good especially when the sun is beaming down on you.


Hit the beach. Dial up your favorite beach tune on your iPod, slap on plenty of sunscreen, and go coastal. Walking on soft sand can burn 20% to 50% more calories than walking on a hard surface, thanks to the extra effort it takes (the softer the sand, the harder you'll work). Ready for more fun? Look for a beach volleyball game. Despite what you see on TV, you don't need a bikini (shorts and a T-shirt are fine), but if you get hooked and start playing regularly, you might be bikini-ready soon. A 30-minute beach volleyball game burns up to 355 calories.

Baco Mercat

In my never ending journey to try all types of wonderful foods, a business colleage and close friend suggested we dine on rustic Spanish cuisine and invited me to dinner at Baco Mercat, an authentic nuevo latino restaurant, serving comforting Spanish cuisine. 

Located on a vibrant street strung with twinkling street lights, in the historic old bank district (which reminded me a little of the meat packing district of a "sex and the city" segment) sits this rustic restaurant with great ambiance and friendly service.  Once in the door, the place felt warm and inviting, with an eccletic selection of music and a full bar.  The menu is big with a variety of choices, but not overwhelming and the prices are reasonable.

Baco Mercat is known as the home to "the baco" which is a signature flat bread created by chef Josef Centeno. The baco bread is served in its original sandwich form and comes in many flavorful varities. The most popular is "The Original," which consists of a heavenly mixture of beef, pork belly, carnitas, smoked aioli and salbixada.

Although "the original" baco sandwich (which did look extremely appetizing) seemed a little heavy for my appetite considering we were dining after 8pm, we decided to experience "the coca" which is a flatbread pizza, rolled out thin, baked crispy and loaded with toppings for an incredible pizza packed with flavors that are out of this world.

After perusing the menu we selected on a few delicious small plates to share and accompany our "coca."  We ordered the "Caesar Brussel Sprouts" and the "Blistered Okra."  Quite honestly I think we could've ordered a "baco" and vegetarian "coca" with two sides, along with our Spanish red wine and would've been completely satisfied without being stuffed.

Healthy Tip of the Week...Eat Greek!

Eat Greek - Prevent Dementia

According to health magazine's, did you know you could slash your risk of Alzheimer's by 60 percent with just two healthy habits: Eat like a Greek, and go for a walk.

Why a Walk Helps
Wish you could remember yesterday like it was only . . . yesterday? Then take a 30-minute walk today. And every day. No excuses. I recently read that a recent study showed that a little less time than that -- a mere 20 minutes of physical activity -- helped counter faltering memories in people over age 50. But there are plenty of important reasons -- including your heart, your blood pressure, your stress level, your mood, and your joints -- to extend that to at least 30 minutes a day. Get your daily dose of excersie and then make yourself my recipe of a "grilled halibut greek salad w/shallot vinaigrette" for a great lunch or excitingly light dinner.

Mediterranean Magic
According to health magazine's, people with the lowest dementia risk ate the highest amounts of fruit, veggies, legumes, and fish, but less meat and dairy products. All very typical ratios in a Mediterranean-style diet that doctors and health experts alike recommend for all sorts of reasons. These nutrient-dense, healthy-fat-focused foods could help protect brains against disease and cognitive decline and help protect the body from lots of other bad things, too.

Mediterranean Greek Salad

2 lrg. Roma Tomatoes, medium chopped
1 lrg. Orange Bell, medium chopped
1 lrg. Yel. Bell, medium chopped
½ lrg. Spanish Onion, small chopped
1 lrg. Hothouse Cucumber, chopped
6 oz. Kalamata Olives
¼ c Italian parsley, chopped coarse
4 oz. Premium Feta Cheese, loosely crumbled
1/2 lb. Mache
1 bu. Romaine Lettuce, chopped
1 lb. Grilled Halibut (or whitefish)


Shallot Vinaigrette:
4 Tbl. Lemon juice
2 oz. anchovies, chopped +1 tsp. anchovy oil
1 tsp. Dijon mustard
1 Garlic clove, crushed
½ c Grapseed oil
1 ½ Tbl. Oregano, dried
S&P (to taste)


Method:
Get a medium saute pan hot and steaming on the fire with a touch of EVO in the pan.
Salt and pepper the halibut and lay in the pan until seared and golden. Turn and cook through. Remove from pan and set aside.

Combine the first 6 ingredients in a mixing bowl and drizzle the vinaigrette on top. Toss
together lightly. Place the mache and the chopped romaine on a serving platter and top with the dressed greek salad mixture. Add the crumbled feta and the grilled fish and place on top of the salad and salad mixture. Top with chopped parsley and drizzle with additional vinaigrette across the grilled fish.

To make the Mediterranean Greek Vinaigrette:
In a small mixing bowl add the dijon, lemon juice, anchovy,anchovy oil, garlic and oregano,
whisk in the EVO and season to taste.

Healthy "V-Day" Tip of the Week...Love, Sex and Food!

Falling In Love Can Curb Your Appetite: It's an interesting notion that being in love and the new feeling of a brand new love interest can actually decrease your appetite. Blame it on the "butterflies" that swarm around in your stomach when you gaze into his or her eyes that leave you feeling all flustered and hungry for only more passion. Theory has it that the love endorphines of a passionate relationship relieves tension, reduces negative energy and produces a sense of well being . There is also an increase in dehydroepiandrosterone (DHEA) hormone production from the adrenaline glands that act as a stress killer. So by all means let go and let love rule, it can only beautify the inner you.

Making Love Several Times A Day Increases Weight Loss: Believe it or not...the more love making you do, the more weight you are destined to lose and the better you'll look. Yes, excersise and a proper diet program will assist, but you might want to excersise your sexual options with various positions and techniques to stretch those limbs, get good and sweaty and repition never hurts here, it only helps. You'll find your abs will become flatter from the missionary crunches and your hamstrings and buttocks will become firmed and more toned from the "baby on top bounces and balances." So go ahead and make love as much as humanly possible (to the one you love), you'll look good, definitely feel good doing it and get the most out of your bedtime workout program.

Healthy Tip of the Week: Lose Weight While You Sleep

I was watching the Dr. Oz Show a few week's back and he spoke on a few key ingredients which support losing weight while you sleep. I found these techniques to be quite interesting and have found myself practicing what he preached. Here are some of the techniques for losing weight while going off to slumber land.

1. The Eye Mask - The natural sun wakes me up in the morning and invigorates and gets my day started, but sometime I really need a good nights rest, so my boyfriend introduced me to the eye mask and asked me to try it for a sound and relaxing sleep. So I did and believe it or not the mental slumber actually calmed my mind from racing and gave me a peaceful sleep. I was able to rest earlier than my normal late bed time, so a full 8 hours or more I received giving my body the proper sleep it so deserved.

2. Sounds of the Elements - I just love the sounds of the natural ocean waves, the rain forest, the wilderness and thunderstorms, so I purchased a wonderful machine from Brookstone last year that has 12 sounds of natural elements that are relaxing and peaceful to the mind. So when I sleep at night I am able to block out the sounds of fire trucks, noisy neighbors and passersby. Your subconscious mind tunes off and on to a subliminal sleep and soon you find yourself melting right into the mattress.

3. Fresh Air - I've never been a fan of circulated air, even though my condo has all the high tech properties a condo is built-in with, so I try not to rely on the air unless it's 100 degrees outside. For me on a chilly night I get comfy with down comforters and fluffy pillows and on a warm evening, crisp cotton sheets and a throw blanket feel great against my skin. But all in all, I always sleep with the bedroom window cracked so I can feel the natural refreshing air circulate through my room. It gives me another sense of comfort and peace. Try it with the eye mask and sounds of the elements and you will soon be that slimmer sleeping beauty.

4. Eat Before 7pm - Another excellent tip for keeping the weight down is try and have your last meal of the day...dinner before 7pm. This isn't how you can lose weight while you sleep but I find it is definitely an encouraging way to focus on sleeping better with a not so full belly and your digestive system has the ability to break down the food you ate earlier, faster and easier.

Super Game Day Recipes!

We all know that Super Bowl Sunday is not just about the game—it’s about the food. But pass on the store-bought snacks and take-out food—they’re loaded with fat and sodium. If having a multitude of friends over add a few healthy/vegetarian homemade game day recipes for variety and taste. Try adding these easy Super Bowl recipes which pack less than half the calories and fat of traditional versions of Super Bowl favorites. My healthy and vegetarian Ground Vegan Beef Tacos with Blue Corn Tortilla Shells and Grilled Portobello Mushroom Sliders with Chimichurri and Swiss are so delicious and enjoyable you can mix them in with your other party table favorites. Regardless of who wins the game, you’ll score points among your fellow fans with these healthy Super Bowl recipes.

Ground Vegan Beef Tacos with Crispy Blue Corn Tortilla Shells

1 pkg. Yves, Vegan Meatless Ground
½ Medium Onion, Finely Chopped
1 Scallion, Finely Chopped
½ Bu. Cilantro, Chopped
1/2 tsp. Chili Powder
1 tsp. Onion Powder
1 tsp. Cumin Powder
½ tsp. Granulated Garlic
1 Jalapeno Chile, Seeded and Chopped Fine
¼ c Shredded Vegan Cheddar Cheese
6 GARDEN OF EATIN’ Blue Corn Taco Shells
EVO
Organic Sea Salt and Cracked Pepper

Method:
In a large sautee pan add the EVO, onion, jalapeno, ground meatless, scallion, cilantro, taco seasonings and water. Simmer together until the meat is browned and the flavors are well blended together (about 5-8 minutes). Salt and pepper to taste. Fill the taco shells with the mixture, the cheese, lettuce, prepared guacamole and salsa.


Grilled Baby Portobello Mushroom Sliders with Chimichurri and Swiss

6 Baby Portobello Mushrooms, Cleaned and Stems Removed
1/2 Lb. Fresh Arugula Lettuce
1/2 c. Garlic-Aioli (prepared)
4 Slices Jarlsberg Swiss Cheese (cut small to fit the mushroom tops)
2 Roma Tomatoes, Sliced
1/2 c. Chimichurri Sauce (prepared)
6 Mini Burger Buns (or) Seeded Dinner Rolls

Method:
On a hot indoor or outdoor grill, place the chimichurri marinated portobello mushrooms and grill for about 8-10 minutes. Remove and place on warmed mini burger buns that have garlic-aioli spread. Top with roma tomatoes, swiss cheese and arugula, top with another warmed mini burger bun with garlic-aioli and serve with a 4"inch wooden stick to hold together. Enjoy!

Chimichurri Sauce

1 c. Flat Leaf Parsley, Coarsely Chopped
1 c. Cilantro Leaves, Coarsely Chopped
2 Garlic Pods, Fine Chopped
½ c. Extra Virgin Olive Oil
2 Tbs. Sherry Vinegar
¼ tsp. Red Pepper Flakes

Method:
In a food processor add the parsley, cilantro, garlic , sugar and sherry vinegar. With the motor running stream in the olive oil and pulse until medium chunked and well blended. You can also use a powerful blender. Pour the mixture into a bowl, add the red pepper flakes salt and pepper.

Taste and adjust seasoning to your liking. You may also prepare this sauce by hand using a knife and cutting board. Great served on steak, chicken, Portobello mushrooms, grilled vegetables and rustic breads. Enjoy!

Healthy Tip of the Week

Cut Out The Fast Food Drive By's
Do you ever get those hunger cravings during the middle of the day, the urge to grab a quick bite on the run and all of a sudden begin to notice there's a fast food establishment on every corner. Temptation!! It's so easy to do a quick drive by into a McDonalds, Jack in the Box or Wendy's to grab a high calorie burger, sandwich or a bag of french fries. When I'm eating healthy and keeping my weight down it's difficult not to be a victim to fast food establishments, so what I do to stay focused and keep my energy up is keep packages of organic trail mix or almonds in my purse to snack on. Visit Jamba Juice stores or smoothie bars to keep that full feeling by incorporating liquid proteins throughout the day.


Incorporate Friendly Fat Into Your Diet
Ahh...avocados, the friendly fat. Known for its 20 essential nutrients, including fiber, potassium, Vitamin E, B-Vitamins and Folic Acid. They also act as a "nutrient booster" by enabling the body to absorb more fat-soluble nutrients.

Growing up a California kid, I was raised on the luscious, creamy goodness of California avocados and use their nutritional properties for various benefits. This delicious fruit also known by the Aztec's as the "fertility fruit" can be used in many body beneficial forms as an ingredient in many recipes to being used as an invigorating face and body masque.


In recipes, it is used as the base for the Mexican dip known as guacamole, as well as a spread on corn tortillas or toast, served with spices. In the Philippines, Brazil, Indonesia, Vietnam, and southern India , avocados are frequently used for milkshakes and occasionally added to ice cream and other desserts. In Brazil, Vietnam, the Philippines and Indonesia, a dessert drink is made with sugar, milk or water, and pureed avocado. Chocolate syrup is sometimes added. In Morocco, there is a similar chilled avocado and milk drink, that is sweetened with confectioner's sugar and hinted with orange flower water. In Australia and New Zealand, it is commonly served in sushi, on toast, or with chicken. In Ethiopia, avocados are made into juice by mixing them with sugar and milk or water, usually served with Vitmo and a slice of lemon. It is also very common to serve layered multiple fruit juices in a glass (locally called spreece) made of avocados, mangoes, bananas, guavas and papayas. Suprisingly, In Iran, it is used as a rejuvenating facial cream. Avocados are also great in salads used to make salads, used in sandwiches and as a quick and satisfying appetizer.

Here is one of my favorite avocado snacks called "Avocado Toast." It's quick and simple to prepare, and you only need 5 ingredients.

Ingredients:
2 Pcs. whole wheat toast, cut in half
1 sm. avocado, mashed
1 pinch, crushed red chili flakes
1/2 lemon, juiced
1 pinch, sea salt











Avocado Toast

Method:
In a small mixing bowl add the advocado and mash with a fork until chunky and creamy. Spread the avocado mixture on the toast, sprinkle with lemon juice, sea salt and crushed red chili flakes. Enjoy!

Post Master Cleanse...Organic Juices

Now that my cleansing journey is over and I'm back among the socializing and EATING population again, I've slowly jumped back into the swing of everyday living with some delicious organic juices that helped put back the natural vitamins and minerals my body needed.



Organic Carrot-Orange Juice
Ingredients:
20 Organic Carrots, ends cut off
8 Organic Juicing Oranges, all skin off
Strainer

Method:
In a large mixing bowl gather the ingredients and take to the power juicer. Have a small mixing bowl ready to gather the juice and a strainer near by. Turn on the juicer and place the fruit and vegetable through until all are juiced. Place the carrot-orange juice through the strainer (small batches at a time) with a large mixing bowl underneath to catch the juice. Strain and pour into a carafe or pitcher. Refrigerate and enjoy. You can add ice to a glass and pour the juice over if desired.



Another wonderful juice that builds blood cells and gives great nutrients to the body are these organic and natural ingredients found in "The Red Beet Juice Blast." A combination of red beets and celery give this juice it's earthiness, and the carrots and red delicious apples add the natural sweetness.

Ingredients:
6 large whole organic beets, cut into fourths
4 organic celery stalks
4 organic red delicious apples, cut into fourths
8 organic carrots, ends cut off

The Master Cleanse

Ok, so I went on the popular and infamous Master Cleanse two weeks back (the lemonade diet) and let me tell you it sure was an insightful and disciplined journey. (Remember this was the diet Beyonce did before she stared in the movie Dream Girls). The suggested minimum time period for the liquid cleanse is 10 days and you aren’t allowed to eat anything, drink anything or smoke anything other than this self-prepared harsh lemonade. In order to get the maximum result of giving an overworked digestive system a rest and cleansing, drop some unwanted holiday pounds IMMEDIATELY I had to focus, and PRAY! I must admit after coming off a holiday season filled with food GLORIOUS food, an overindulgence of alcohol and fine wine this was a real stretch for me because I am a CHEF for crying out loud! I’m constantly around food, I have to shop for food, I read and blog about food and am in conversations worldwide with friends on twitter, FB and email about FOOD! And not to mention I drink!

So the very idea of 10 whole days with no food or wine left me reluctant and insecure on if I could actually pull this off. I got through exactly 8 days suffering from headaches, stomach aches, muscle aches and sleep depervation. I read in the booklet “The Master Cleanse…by Stanley Burroughs” that these symptoms would occur because all the toxins and impurities would start to release from my body and it was part of the cleansing process.

The way I got through the self-punishable and grueling 8 days was to completely ignore my craft for that time period. That meant I had to ensure I had no work coming up, such as private dinner parties, cooking demonstrations, lectures and private chef gigs. I had to reject invitations for dinners with friends and when in lunch meetings I had to bring my 16oz. water bottled filled with this self-made, hot-lemonade concoction and look completely foolish as the only one not EATING!! WTF????

Food looked and smelled enticing and inviting…for the first three days that is. After the first three days and when the aches began to subside, I believe I crossed over. Day 4, wasn’t as difficult a task in accomplishing my goal and I was on my way.

I could’ve gone the entire 10 days and maybe a little further…14 days, 16 days, maybe even 20 days?? But I got a phone call from new client Harvey Mason Jr. to chef his wife’s birthday dinner at their private home. And all bets were off!

I lost 8 pounds in 8 days, but the best thing I can say I received from this was in reality it not only cleansed my system, purified my glands, helped drop the holiday weight, but it built self-confidence, deepened spirituality and gave me clarity that I had never seen or felt before with just plain ole’ dieting. By denying myself in this way, I was able to make choice decisions for my life. I will definitely cleanse again and quite often.

A Loving Pot of Gumbo! Happy New Year's



My journey with the love and appreciation of cooking gumbo goes back many family members and many states in between. From Cincinnati, Ohio, New Orleans, Louisiana and Los Angeles, California aunts, uncles, moms, dads and I take a whole day to add love to a stock pot of Creole goodness all hearty and brimming with fresh seafood and vegetables. Each pot of gumbo is carefully planned requiring using only the finest and freshest ingredients.

Every year around this time my family makes a loving pot of seafood gumbo. Every delectable crustacean from cracked king crab legs, jumbo shrimp, oysters, lobster claws and tail meat are thrown into a pot of savory goodness with a roux that is so rich and deep burgundy hued you swear you could eat the whole pot alone. Succulent meats such as spicy andouille sausage, boudain sausage and chicken are sautéed in Creole spices and their own fat and then added to the pot and simmered for hours. The trilogy of red and green bell peppers and white onion make that harmonious flavor that you can smell down the street. And last but not least fresh cut okra and gumbo file to thicken the pot and give it more flavor.

It’s interesting though how the gumbo wars began with heated conversations between families from California to the Southern states as they puff out their chests and proudfully speak on whose mama’s gumbo is the best and whether the consistency should be thick or soupy. I prefer to make mine with a medium thick consistency. Also, don't forget the debate on whose house they will be visiting to sample and take a tupperware of gumbo home for the next day…if it even makes it that far!

So as I think about the holiday season, the year's end and the gift of giving love and being thankful for all that God has blessed me with. It reminds me of creating a loving pot of savory rich goodness. A pot full of love, happiness, friends from around the world and an extremely large pot of savory goodness.

Brown Bag Back To School Lunch and Snack Ideas For Kids

The end of summer is nearing and it's back to school for the little ones. Packing them healthy lunches and snacks to take to school offers many benefits and can be quite quick and simple to do. Creating healthy brown-bag meals can reduce fat, reduce calories, and lower sodium in our childs diets, improving overall health, improved activity and higher IQ's. Smart choices can help us maintain a healthy weight.

To move lunch and snack time into a healthful direction. Here are some ideas:

Choose foods with higher amounts of the nutrients we need: fiber, protein, calcium, and vitamin C.
Avoid foods loaded with things we need to eat less of: saturated fat, sodium, and added sugar.
An easy way to accomplish both goals is to include more whole foods -- and less processed foods, junk food, and fast food at meals and snacks.

Here are some Quick Lunch and Snack Picks For The Kids:

Cold Cheese and Fruit Kit: Make your childs own “Lunchables” by filling a reusable container with assorted cheese slices, easy-to-eat fruit like apple slices and grapes, and whole wheat crackers. You can be as creative as you like and it also ends up being much cheaper.

Falafel Pita Pleaser: Purchase ready-to-bake falafels in the vegetarian refrigerator section of some supermarkets. (Trader Joe's sells bite sized frozen falafel) Bake them up ahead of time, then insert them in a whole wheat pita pocket spread with some hummus (homemade or store-bought) and top with grated carrots and a creamy cucmber dressing.

Sushi with Veggies: Pick up a tray of premade vegetable sushi at your supermarket or favorite Japanese restaurant. It makes a great grab-and-go lunch the next day. Because it features veggies and avocado. Kids love "grab n go" foods and sushi is something kids find popular and trendy. Kids like trendy! It makes them feel grown-up!

Wrap It Up: Make your sandwich wrap the night before, using a whole grain flour tortilla and spreads like green or sun-dried tomato pesto, olive tapenade, or honey mustard. Layer it with slices of lean meat or cheese, assorted vegetables, tomato, and lettuce. Because it’s whole grain, the tortilla won’t get soggy overnight. You can also cut the wrap into sushi like slices. Fun for the kids to eat!

Fun-to-Eat Edamame: You’ll find bags of edamame (in pods) in the freezer section of most supermarkets. Keep a bag in the freezer, add some to your brown bag in the morning, and by lunch they will be thawed. Open up the pods and snack away at the high-protein, high-fiber green soybeans inside. You can also prepare the edamame seeds into a paste for a "Roasted Garlic and Edamame Hummus" (see recipe below) and serve with zip-lock baggies of celery, carrots and cucmber sticks.

Roasted Garlic and Edamame Hummus

Ingredients:

1 1/2 c Edamame shells, cooked
2 tsp. Tahini paste
10 sm. Whole garlic pods, roasted
¼ c Edamame liquid
1 tsp. Lemon zest
½ Lemon, juiced
¾ tsp. Sea salt
½ tsp. Cumin, ground
¼ tsp. Coriander, ground
3 T EVO + ¼ c (for garlic roasting)


Method:
In a food processor combine the edamame, tahini, roasted garlic, lemon zest, lemon juice, cumin and coriander, begin blending and add the edamame liquid. After the edamame hummus is coarsely blended , gradually add the EVO and roasted garlic olive oil and sea salt with the motor running and blend until smooth.

Roasting Garlic:
Preheat oven to 350. In a small sautee pan add ¼ cup EVO and the garlic pods. Oven roast for 30 minutes, until the garlic begins to brown and the aromas are fragrant.


Mini Muffins: Homemade muffins can be a healthful alternative to processed snacks and junk food when made with mostly whole wheat flour, moderate amounts of canola oil and minimal added sugar. Just pop a serving of mini muffins in each zip-lock bag and store in the freezer. Pack them in the brown bag, and they’ll be soft and ready to eat by lunch or snack time.

Nuts or Trail Mix: Trail mix pumps up the carbohydrate calories by adding dried fruit to the nuts. Carob chips and/or yogurt chips added to your trail mix make a never ending "nibble" food for the little ones.

Cheese Sticks: Individually wrapped cheese sticks are available in part-skim mozzarella and 2% sharp cheddar, and even pepper jack. String Cheese sticks are fun to peel and eat even while sitting in the class room.

Kettle Korn Fun: For something a little sweet but crunchy, pop up some Orville Redenbacher’s Smart Pop Kettle Korn (or similar) and pack half of the 2.9-ounce bag of popcorn for a brown-bag treat or snack.

Yogurt and Fruit Cups: 8 ounce low-fat yogurt with fruit and naturally sweetened fruit cups make great brown bag additions for lunch or recess snacking.

6 Easy Ways To Stay As "Skinny" As A French Woman

It has been almost 15 years since I was in Paris, France where I studied culinary arts at Le Cordon Bleu Culinary Academy, but the happy memories of the food, the wine, the culture and the people still linger, calling me back to visit this romantic and thriving city.

If you have ever been to Paris, France, I'm sure you have noticed there are not alot of women running around with additional weight on their midrifts, thighs, buttocks or anywhere else. While living there for the time I studied in culinary school, I acquired alot of "amis de femme" and adopted some of their tactics. So here are some of their everyday "skinny" living practices, I find very useful as well as "au naturale".

Women Nibble... I promote my brand "Nibble, Small Bites," and my passion for eating small portions of tasty and exotic foods comes natural to me after my time spent in Paris. So, it is very rare that you will fine a 12" plate piled high with anything fattening or non-fattening on it for a French woman. The ritual of eating small portions has always been a French woman's rule of thumb. How do you think they stay so svelt to be able to slip into their cute little black cocktail dresses?

Women Walk... Yes, they walk everywhere! To the bakery, outdoor market, their kids schools and to the local entertainment complex, you better believe they walk there. I'm not talking about putting on sweats and sneakers and "power walking" at the park, I'm talking about leaving the keys to your mini cooper at home and getting some fresh air, while stretching those lovely leggy limbs of yours. Try it in high heels, just like the French!

Women Eat Slowly... French women take their time and "dine" not "eat." Whether it be breakfast, lunch or dinner. They take their time and chew every bite. Taking hours to finish their meal. This practice will definitely fill you up faster without having to consume large portions or large quantities of food.

Women Eat with Friends and Family... Dining with either a small or large group of friends and/or family members is something that has always been a part of European culture. Sitting with diners not only makes for good quality time for sharing and caring, but it also entices joy and inspiration for great conversation. Just remember to not talk with your mouth open!

Women Eat Full Fat Cheese... Seriously! Stop eating low calorie anything. That low-cal, fat-free recipe will only cause gradual weight gain...please believe me! Until a few years ago, you'd be hard pressed to even find a diet Coke in France.

Women Have Wine with Their Meal... Yes, but drink it so slowly that your glass is still half full an hour later. Drink sparkling or bottled mineral water with lemon or lime wedges in between sips of wine. *Remember lemons and limes are natures "natural diruetics."

Best Ways To Spruce Up Your Salads For Summer

It's summertime and summer salads have teamed up with their light and tasty counterparts such as sweet summer fruits, lightly grilled proteins, earthy, crunchy toasted nuts, herbal vinaigrettes and low-calorie creamy dressings. By adding these ingredients to your salads you can spruce up a well known side dish or starter and make an entree meal that's full-filling, satisfying and delicious.

Consider adding fresh fruits like strawberries, blueberries, apples and grapes. Or toss in some dried fruits like cranberries, apricots, and golden raisins to make your salads come alive with the vibrant tastes of sweet and refreshing ingredients.

Hot off the grill proteins easily turn any salad into a main meal with the addition of succulent shrimp, juicy chicken, savory salmon, sliced steak and marinated tofu. You can also add the protein of cheese. Cheese such as blue, feta, goat and mozzarella often goes well with fruit and adds tons of flavor.

Avocados, olives, and toasted nuts add a whole new taste dimension, not to mention some heart-healthy oils. Cooked whole grains such as hard wheat berries, quinoa, and bulgur add fiber. Beans or chickpeas add protein and fiber. A variety of great greens like the sweet tastes of Boston, red and green leaf and romaine are great and have nutritious value. While others have a nutty or bitter taste, like endive, radicchio, arugula, watercress and spinach. Mix and match the tastes and textures for an explosion of mother nature's gardeny green goodness. You can also throw in herbs like basil, dill or cilantro so that each bite surprises your taste buds.
To top it all off go with a vinaigrette and low-calorie creamy dressings. Choose a vegan-ranch made with tofu and veganese mayo for a Grilled Chicken California Cobb Salad over a mix of crisp romaine and spinach. Try a sesame-soy vinaigrette with grilled shrimp, avocado, toasted almonds and mandarin oranges over a mix of romaine, raddichio and watercress. Or how about a lime-cilantro vinaigrette for that steak, chick pea, corn and avocado salad. You can make your own healthy vinaigrettes by infusing vinegars with some of your favorite herbs…and you can turn high-fat creamy dressings into healthier vinaigrettes.
