Mint Juleps (made with fine Bourbon, mint, sugar and ice) are synonymous with the Kentucky Derby, the historic thoroughbred race and annual kick-off to the Triple Crown series.</div>

<u>Ingredients</u></div>

4 c. Bourbon (preferably Woodford Reserve)</div>

3 bu. Fresh Mint</div>
<div class="separator" style="clear: both; text-align: center;">
1 c. Water</div>
<div class="separator" style="clear: both; text-align: center;">
1 c. Granulated Sugar</div>

Crushed Ice</div>

<u>Method</u></div>
<div class="separator" style="clear: both; text-align: center;">
First, remove about 50 small mint leaves. Wash and place in a small bowl. Cover with 3 ounces of the Bourbon. Allow the leaves to soak for about 20 minutes. Gather the leaves in a paper towel. Thoroughly wring the mint over the bowl of Whiskey. Dip the bundle again and repeat the process several times. Simple Syrup: Mix 1 cup sugar and 1 cup water in a small saucepan. Heat to dissolve the sugar. Stir constantly so the sugar does not burn. Set aside. Mint Julep Mixture: Pour 3 1/2 cups of the Bourbon into a large glass pitcher. Add 1 cup of the simple syrup to the Bourbon. Now begin adding the mint extract one tablespoon at a time to the Julep mixture. Taste and adjust as you go. When you think it tastes right, pour the whole mixture back into the glass pitcher and refrigerate for a few hours or overnight. To serve: Fill each glass with crushed ice, pour the Mint Julep cocktail over the ice and garnish with a sprig of mint. Serve immediately.</div>

Mother Earth gives us a bounty of beautifully nutritious fruits and vegetables to create plates of amazingly good tasting dishes. <br />

So in honor of "Earth Day" 2015 I created a salad made with raw and natural ingredients straight from Mother Earth's finest ingredients of organic kale, carrots, brown mushrooms, beets and sunflower seeds.<br />
<br />
This salad is so darn delicious, simple and quick using only 5 ingredients. Celebrate life and Mother Earth!<br />
<br />
<u>Mother Earth Day Salad</u><br />
1 bu. Flat Kale, Chopped<br />
4 ea. Organic Brown Mushrooms. Sliced<br />
2 Organic Red Beets, Cooked, Peeled and Sliced<br />
1/4 c. Shredded Carrots<br />
2 Tbs. Raw Sunflower Seeds<br />
<br />
<u>Walnut-Honey-Citrus Vinaigrette</u><br />
4 Tbs. Orange Juice<br />
1 tsp. Orange Zest<br />
2 Tbs. Honey<br />
1/2 tsp. Dijon Mustard<br />
1/2 c. Walnut Oil<br />
Salt/Pepper to Taste<br />
<br />
<u>Method:</u><br />
In a small mixing bowl add the Dijon mustard, honey, orange juice and orange zest. Whisk in the walnut oil to emulsify. Salt and pepper to taste. Set aside.<br />
<br />
In a large mixing bowl add the kale, mushrooms, beets and carrots. Add the vinaigrette and toss lightly. Transfer to a serving bowl or platter and top with the raw sunflower seeds. Enjoy!<br />

I had to have tomatoes and olive oil on toast daily. Wouldn't you know that the more I ate it, I eventually grew bored and burned out! But a lot of my clients didn't and were still requesting it's hearty and robust flavors. So, finding inspired love of bruschetta all over again, I decided to create an inviting new look and twist to the ever popular appetizer by using long thin slices of the baguette, creamy burrata and using the diced tomato as the topper. Brush both sides with olive oil, salt and pepper and bake until golden 15-20 minutes. Turn crostini's over once while baking. Remove and set aside. In a small mixing bowl add the tomatoes, basil, salt and pepper. Lightly toss and set aside. To assemble...spread a thin coating of the creamy burrata atop the crostini, top with the tomato, basil mixture and repeat until all mixture is gone. In a large mixing bowl gather the ingredients and take to the power

on the juicer and place the fruit and vegetable through until all are
juiced.<span style="mso-spacerun: yes;"> </span>Place the carrot-orange juice
through a strainer (small batches at a time) with a small mixing bowl

1 cup whole milk<br />3 Tbs. condensed milk <br />3 tsp honey (to taste)<br />1/2 cup fresh ripe mango cubed or pureed<br />
1/2 cup fresh ripe papaya cubed or pureed<br />1/2 cup crushed ice<br />Malibu Coconut Rum (floater)<br />

Place the mango, papaya, condensed milk, milk and honey into a blender. Process until thick and frothy. Add the crushed ice and process until smooth and the shake is creamy. Pour into mini shot glasses and float a splash of Malibu Coconut rum on the top of each mini milkshake and serve. The condensed milk is a very Cuban addition in making this tropical milkshake a very traditional exotic treat!<br />

<strong><u>Tahitian Vanilla-Coffee Bean Spiked Milkshake</u></strong><br />
1 cup whole milk<br />2 scoops Tahitian vanilla bean ice cream <br />
3 Tbs. Kahlua (coffee flavored liquer)<br />2 tsp. vanilla agave nectar (to taste)<br />
1/2 cup crushed ice<br />Captain Morgan Spiced Rum (floater)<br />

Place the milk, ice cream, agave and kahlua into the blender and process until thick and frothy. Add the crushed ice and process until smopth and the shake is creamy. Pour into mini shot glasses and float a splash of Captain Morgan Spiced Rum on the top of each mini milkshake and serve. Top with shaved chocolate, cocoa beans and whipped cream.<br />

The atmosphere at the Drawing Hope Int'l Masquerade Gala was both compassionate and festive. All of the wait staff bore fun colorful face masks and the centerpieces dripped with strings of clear crystals which caught the light beautifully setting a warm, comforting mood on the entire evening. The music was varied and upbeat, the food, a true culinary delight, the award winners, humble and gracious, the host, witting and engaging. Overall, a triumph for their first charity gala, Drawing Hope, the guests and most of all for the survivors of sexual abuse.<br />

Fill pitchers with a variety of iced herbal teas. Offer plenty of water, and
fill it with slices of fruit or cucumber to entice your guests to hydrate

<strong>Dessert</strong> - Given all the yummy
seasonal fruits on hand, its a little difficult to select just one. So I like to sample a variety of fruits by making summer fruit kabobs. They're fun, creative and easy to pick up. Fruit is high in fiber, low in calories, rich in vitamins,
and contains no fat. </div>

<strong>Main Course</strong> - Think PROTEIN! Ditch the hot dogs and hamburgers and get a little creative. Conversely, while fish is always great, it can
really mess up a grill. I like to make fish bundles wrapped in foil and placed on the grill. Choose a nice moist fish like
mahi-mahi, salmon, chilean seabass or cod. Take a one-foot-by-one-foot square of aluminum foil and rub
it with herbs, lemon and olive oil. Place the fish
in the center, wrap it up (not too snug—give it a bit of room to breathe) and
place it on the BBQ grill. Leave on the
grill for 10 to 12 minutes and you have yourself a nice healthy meal. Fish is
high in protein and an excellent source of omega-3 fatty acids. <br />

<strong>Entertainment</strong> - Crank up the tunes, clear the floor, deck, or lawn, and make room for some
dancing fools. Dancing is a great form of excersise and who knows you might catch the eye of some hottie and get the digits soon after you get your boogie on. </div>

I bought some luscious Haas avocados, crisp Hothouse cucumbers and some summer fruits of white peaches, juicy nectarines and sweet black plums. Now the fruits are great in-between meal snack foods, but for lunch today I'm going to work with the buttery Haas avocados and refreshing Hothouse cucumbers to create a cool summer soup. Yes, I know, soup is generally considered a winter dish, but the preparation of this amazingly delicious recipe is something you will truly enjoy during the hot months to come.

In a food processor, add the cucumber, avocado, cumin and serrano chili. Pulse until the ingredients are blended. Add the creme fraiche, broth and lemon juice and continue to blend until smooth. Season with salt to taste and regrigerate for 3-4 hours. Once chilled garnish with chive sprigs and drizzle with avocado-orange infused olive oil and cracked black pepper (optional). Enjoy!

<strong>Pizza</strong> - Cheese and pizza are the No. 1 and No. 2 sources of artery-clogging saturated fat in the American diet. So before you eat it here are some tips to lighten up your pizza: Top it with veggies instead of pepperoni and sausage. While you're at it, say "no" to breadsticks and "yes" to a side salad using a vinaigrette dressing instead of a creamy dressing.

This zesty sauce of parsley, cilantro, sherry vinegar, red chiles, garlic and olive oil (used typically to garnish grilled meats in Argentina) is clearly a blending of Spanish and <span style="font-family: inherit;">Italian</span> cultures and cuisines. It serves a bold richness to grilled meats and punches a pack of herbal flavors when brushed on seafood and vegetables.<br />

The menu is big with a variety of choices, but not overwhelming and the prices are reasonable.</div>

Although "the original" baco sandwich (which did look extremely appetizing) seemed a little heavy for my appetite considering we were dining after 8pm, we decided to experience "the coca" which is a flatbread pizza, rolled out thin, baked crispy and loaded with toppings for an incredible pizza packed with flavors that are out of this world.<br />

After perusing the menu we selected on a few delicious small plates to share and accompany our "coca." We ordered the "Caesar Brussel Sprouts" and the "Blistered Okra." Quite honestly I think we could've ordered a "baco" and vegetarian "coca" with two sides, along with our Spanish red wine and would've been completely satisfied without being stuffed.</div>

Don’t deny yourself what you really love, just buy tiny packages or enjoy a single scoop of ice cream outside the house. Buying a whole gallon is just tempting fate and then you'll find yourself indulging in a sugar frenzy all week long.<br />
